Pumpkin Protein Mac & Cheese Casserole

I don’t know anyone on the planet who doesn’t like mac & cheese, it’s like the ultimate comfort food.

I’ve taken a few of my favorite clean Mac & Cheese recipes and made it my own, I really feel like if it had more protein that it would be perfect, and it was. My whole family LOVED this and I think it’s going to be a Sunday ritual until we get sick of it haha.

I’m not a chef by any means but I do love taking a recipe’s and making it my own by adding things and taking out other things to make it fit my meal plan and taste buds.

This recipe I would eat on my reset day as its a higher carb food, I carb cycle so this is a high carb meal. If you are not sure your Macros or carb cycle be sure to click here to find out.

Now don’t let the pumpkin throw you off, this will be a crowd pleaser for sure.

Just remember when it comes to trying to reach your fitness and health goals all it comes down to is swap outs NOT CUT OUT, make sense?  if you do just this tip you will see results. 😉

RECIPE 6 servings

  • 4 cups Brown Rice Penne

  • 2 cups Cottage Cheese

  • 1 cup Pureed Pumpkin

  • 1/4 cup Cheddar Cheese

  • 1/2 head Cauliflower

  • 70 grams Sliced Turkey Breast

  • 1 package Cheese Packet From A Kd Box

  • 1/2 cup Almond Flour


  1. Cook brown rice penne and steam in another pot cauliflower, cook each until both are soft and drain. Put each aside ( separate ) Meanwhile, you will chop your turkey deli into small pieces.
  2. Take cottage cheese, pumpkin puree, cheese packet and 1 cup steamed cauliflower and put in the blender or food processor. blend until smooth and creamy.
  3. Pour sauce over the noodles and mix well you then will put the cut up sliced turkey deli and mix well, place mac and cheese in a pyrex baking dish or an oven-safe casserole dish.
  4. Top with shredded cheese and sprinkle almond flour over the top and broil on high for 10-15 minutes. watch it though as you don’t want it to burn.
  5. serve and Enjoy!
